Ingredients

2 medium carrots, grated

3 eggs

1/2 cup coconut oil or sunflower oil

1 cup oat flour or almond flour

1/2 cup brown sugar or sweetener of your choice

1 teaspoon vanilla essence

1 teaspoon baking powder

pinch of salt
Preparation mode
- Preheat the oven to 180°C and grease a cake tin with coconut oil or line with baking paper.
- In a blender, add the grated carrots, eggs, coconut oil (or sunflower oil) and vanilla essence. Beat well until you get a homogeneous mixture.
- In a large bowl, mix the oat flour (or almond flour), brown sugar (or sweetener of your choice), baking powder and a pinch of salt.
- Pour the liquid mixture from the blender into the bowl of dry ingredients and stir until everything is well incorporated.
- Pour the batter into the prepared pan and bake in the preheated oven for around 30-40 minutes, or until a toothpick inserted into the center of the cake comes out clean.
- Remove from the oven and let cool before unmolding and serving.
