1 head of cauliflower

1 cup of wheat flour

1 cup breadcrumbs (or panko for extra crunch)

2 eggs

1/2 cup milk (optional, for a lighter dough)

1 teaspoon of salt

1/2 teaspoon black pepper

1/2 teaspoon garlic powder (optional)

1/2 teaspoon paprika (optional)

Oil for frying (or oil spray for a baked version)
Preparation mode
- Wash the cauliflower well and cut it into medium florets.
- Cook the cauliflower in boiling water with a pinch of salt for about 3-4 minutes, until it is slightly tender but still firm. Drain and let cool.
- In a deep plate, mix the wheat flour with the salt, black pepper, garlic powder and paprika (if using).
- In another deep dish, beat the eggs and add the milk, if using.
- In a third deep dish, place the breadcrumbs or panko.
- Dip each cauliflower floret in the seasoned flour, coating well.
- Then dip into the beaten egg, allowing the excess to drip off.
- Finally, coat in breadcrumbs or panko, pressing lightly so that the flour sticks well.
- Heat the oil in a deep pan to 180°C. Fry the breaded cauliflower florets in small batches, avoiding overcrowding the pan. Fry until golden and crispy, about 3-4 minutes. Drain on paper towel.
- Preheat the oven to 200°C. Place the breaded florets on a baking sheet lined with parchment paper or a silicone mat. Spray with oil spray and bake for 20-25 minutes, turning halfway through, until golden and crispy.
- Serve the breaded cauliflower hot, accompanied by your favorite sauce, such as herbed yogurt sauce, seasoned mayonnaise, garlic sauce or ketchup.
