Ingredients

3 eggs

2 cups of cassava flour

1 small onion, chopped

2 cloves of minced garlic

3 tablespoons butter or vegetable oil

Salt to taste

Black pepper to taste (optional)

Chopped chives to taste (optional)
Preparation mode
- In a frying pan, melt 1 tablespoon of butter or heat a little vegetable oil. Crack the eggs into the pan and stir gently until they are cooked through and form small pieces. Remove from the pan and set aside.
- In the same frying pan, add the remaining butter or oil and sauté the onion and garlic until golden.
- When the onion and garlic are golden, add the cassava flour to the pan. Stir well so that the flour absorbs the fat and becomes lightly golden.
- Add the boiled eggs to the pan with the sautéed cassava flour. Mix well until the eggs are evenly distributed throughout the farofa.
- Season with salt and black pepper to taste. If desired, add chopped chives to add a touch of freshness.
- Serve the warm egg farofa as a side dish with main dishes, such as beans, meat or chicken.
