500g of tripe (beef tripe)

500g white beans

2 Calabrian sausages cut into slices

1 large onion, chopped

4 cloves of minced garlic

2 chopped tomatoes

2 bay leaves

1 chopped green pepper

Black pepper to taste

Salt to taste

Preparation mode
- Wash the tripe well under running water, removing any residue or dirt. Cut it into smaller pieces.
- In a pressure cooker, place the chopped tripe, cover with water and bring to a boil over medium heat. Let it boil for about 10 minutes.
- Drain the boiling water and rinse the tripe again. This helps remove excess fat and impurities.
- In the same pressure cooker, place the cleaned tripe, the white beans (previously washed and left to soak for a few hours), the calabresa sausage, the onion, the garlic, the tomato, the bell pepper, the bay leaves, black pepper and salt to taste.
- Cover with enough water to cover all the ingredients and cover the pressure cooker.
- Cook on medium-high heat for about 30-40 minutes after pressure is reached. Be sure to follow your pressure cooker’s safety instructions.
- After the cooking time, turn off the heat and wait for the pressure to release naturally.
- Open the pan and check that the tripe and beans are cooked. If necessary, cook for a few more minutes without pressure until everything is tender.
- Adjust the salt, if necessary, and finish with chopped chives.
- Serve the tripe with hot white beans accompanied by white rice or however you prefer. Enjoy your meal!
