500g fresh spinach (washed and chopped)

1 medium onion (chopped)

2 cloves of garlic (minced)

2 tablespoons butter or olive oil

2 tablespoons of wheat flour

500ml vegetable stock or water

200ml of cream

Salt and pepper to taste

Grated nutmeg (optional)
Preparation mode
- In a large saucepan, melt the butter or heat the olive oil over medium heat.
- Add the chopped onion and garlic to the pan and sauté until soft and lightly browned.
- Add the chopped spinach to the pan and stir until it begins to wilt.
- Sprinkle the wheat flour over the spinach and stir well to combine.
- Gradually pour the vegetable broth or water into the pan, stirring constantly to prevent lumps from forming.
- Bring the mixture to a boil and cook for about 10-15 minutes, stirring occasionally, until the spinach is completely cooked and the cream has thickened.
- Reduce the heat and add the cream to the mixture, stirring well to incorporate.
- Season with salt, pepper and nutmeg to taste.
