Ingredients

  • 500g fresh spinach (washed and chopped)

  • 1 medium onion (chopped)

  • 2 cloves of garlic (minced)

  • 2 tablespoons butter or olive oil

  • 2 tablespoons of wheat flour

  • 500ml vegetable stock or water

  • 200ml of cream

  • Salt and pepper to taste

  • Grated nutmeg (optional)

Preparation mode

  • In a large saucepan, melt the butter or heat the olive oil over medium heat.
  • Add the chopped onion and garlic to the pan and sauté until soft and lightly browned.
  • Add the chopped spinach to the pan and stir until it begins to wilt.
  • Sprinkle the wheat flour over the spinach and stir well to combine.
  • Gradually pour the vegetable broth or water into the pan, stirring constantly to prevent lumps from forming.
  • Bring the mixture to a boil and cook for about 10-15 minutes, stirring occasionally, until the spinach is completely cooked and the cream has thickened.
  • Reduce the heat and add the cream to the mixture, stirring well to incorporate.
  • Season with salt, pepper and nutmeg to taste.
  • Let the creamed spinach heat for a few more minutes, but do not let it boil.
  • Remove from heat and serve hot.
