Ingredients

1 kg of chicken thighs or thighs (or a whole chicken cut into pieces)

2 tablespoons of oil or olive oil

1 large chopped onion

3 cloves of garlic, chopped

1 large chopped tomato (seedless)

1 chopped green or red pepper

2 carrots cut into slices

3 medium potatoes cut into cubes

1 bay leaf

1/2 cup tomato sauce

1/2 cup white wine (optional)

1 cup chicken broth (or water)

Salt and pepper to taste

Green chives (parsley and chives) chopped to taste
Preparation mode
- Season the chicken pieces with salt and pepper. Book.
- In a large pan, heat the oil or olive oil over medium heat.
- Add the chopped onion and sauté until translucent.
- Add the chopped garlic and sauté for another minute, being careful not to burn it.
- Place the chicken pieces in the pan and brown all sides. This takes about 5-7 minutes.
- Add the tomatoes, peppers, carrots and potatoes to the pan.
- Mix well and let it cook for a few minutes.
- Add the bay leaf, tomato sauce and white wine (if using). Stir well.
- Add the chicken broth (or water) until it partially covers the ingredients.
- Cover the pan and cook over medium-low heat for about 30-40 minutes, or until the chicken is completely cooked and the vegetables are tender. Stir occasionally and add more broth or water if necessary.
- Adjust salt and pepper if necessary.
- Sprinkle chopped green chilli on top before serving.
