Ingredients

500g desalted and shredded cod

4 large potatoes cut into slices

2 large onions cut into rings

3 cloves of garlic, chopped

1 red pepper cut into strips

1 green pepper cut into strips

1 cup olive oil

1/2 cup pitted black olives

3 boiled eggs cut into slices

Salt and black pepper to taste

Chopped parsley to taste
Preparation mode
- In a large pot, cook the potatoes in salted water until tender but still firm. Drain and reserve.
- In a large frying pan, heat half the oil and sauté the onion and garlic until golden. Add the peppers and sauté for a few more minutes. Book.
- In a large ovenproof dish, make layers starting with the potatoes, then the shredded cod, followed by the sautéed onion and pepper. Repeat the layers until you run out of ingredients.
- Distribute the olives and boiled eggs on top. Drizzle with the remaining olive oil.
- Bake in a preheated oven at 180°C for about 30 minutes, or until lightly golden.
- Remove from the oven, sprinkle chopped parsley on top and serve hot.
