Ingredients

  • 1 chicken breast (or 500g chicken thighs)

  • 2 medium carrots, cut into slices

  • 2 medium potatoes, cut into cubes

  • 1 medium onion, chopped

  • 2 garlic cloves, chopped

  • 1 stalk of celery (celery), cut into pieces

  • 1 cup chopped cabbage (optional)

  • 1 cup fresh or frozen peas

  • 1/2 cup pasta (hail mary or shell type)

  • 2 liters of water or chicken broth

  • 2 tablespoons olive oil

  • Salt and pepper to taste

  • Green chives (parsley and chives) chopped to taste

Preparation mode

  • In a large pan, heat the olive oil over medium heat.
  • Add the onion and garlic and sauté until they are lightly golden.
  • Add the whole chicken breast or chicken thighs and sauté for a few minutes until lightly browned.
  • Pour water or chicken broth into the pan. Season with salt and pepper to taste.
  • Bring to a boil and cook for about 20-25 minutes, or until the chicken is fully cooked.
  • Remove the chicken from the pan and shred it using two forks. Book.
  • In the same pan with the broth, add the carrots, potatoes, celery and cabbage (if using). Let it cook for about 10-15 minutes, or until the vegetables are soft.
  • Add the shredded chicken back to the pan, along with the peas and pasta. Cook for another 5-7 minutes, or until the pasta is cooked.
  • Adjust seasoning with more salt and pepper if necessary.
  • Turn off the heat and add the chopped green chilli. Mix well.
  • Serve the soup hot, accompanied by fresh bread or toast, if desired.
