Ingredients

1 chicken breast (or 500g chicken thighs)

2 medium carrots, cut into slices

2 medium potatoes, cut into cubes

1 medium onion, chopped

2 garlic cloves, chopped

1 stalk of celery (celery), cut into pieces

1 cup chopped cabbage (optional)

1 cup fresh or frozen peas
-
1/2 cup pasta (hail mary or shell type)

2 liters of water or chicken broth
-
2 tablespoons olive oil
-
Salt and pepper to taste

Green chives (parsley and chives) chopped to taste
Preparation mode
- In a large pan, heat the olive oil over medium heat.
- Add the onion and garlic and sauté until they are lightly golden.
- Add the whole chicken breast or chicken thighs and sauté for a few minutes until lightly browned.
- Pour water or chicken broth into the pan. Season with salt and pepper to taste.
- Bring to a boil and cook for about 20-25 minutes, or until the chicken is fully cooked.
- Remove the chicken from the pan and shred it using two forks. Book.
- In the same pan with the broth, add the carrots, potatoes, celery and cabbage (if using). Let it cook for about 10-15 minutes, or until the vegetables are soft.
- Add the shredded chicken back to the pan, along with the peas and pasta. Cook for another 5-7 minutes, or until the pasta is cooked.
- Adjust seasoning with more salt and pepper if necessary.
- Turn off the heat and add the chopped green chilli. Mix well.
- Serve the soup hot, accompanied by fresh bread or toast, if desired.
