Ingredients

500g pasta (spaghetti, penne or your preference)

2 chicken breasts cut into cubes

2 tablespoons of oil or olive oil

1 medium onion chopped

2 cloves of garlic, chopped

1 chopped red pepper

2 ripe tomatoes, chopped or 1 can of peeled tomatoes

1 cup tomato sauce

1/2 cup of water

Salt and black pepper to taste

1 teaspoon of paprika

1 teaspoon of oregano

1/2 cup of cream (optional)

Grated parmesan cheese to serve

Chopped parsley to decorate
Preparation mode
- In a large pot, cook the pasta in salted water according to package instructions until al dente.
- Drain and reserve.
- In a large skillet, heat the oil or olive oil over medium-high heat.
- Add the chicken cubes, season with salt, black pepper and paprika, and cook until golden and cooked through. Remove the chicken from the skillet and set aside.
- In the same frying pan, add the onion and garlic, sautéing until soft and golden.
- Add the pepper and sauté for a few more minutes.
- Add the chopped tomatoes and cook until they start to break down.
- Add the tomato sauce and water, mixing well.
- Season with salt, black pepper and oregano. Let the sauce cook over low heat for about 10 minutes, until it thickens a little.
- Add the reserved chicken to the sauce, mixing well so that the flavors are incorporated.
- If desired, add cream for a creamier sauce and mix well.
- Add the cooked pasta to the pan with the sauce and chicken, mixing well so that everything is well coated in the sauce.
- Let it cook for another 2-3 minutes so the pasta absorbs some of the sauce.
- Serve the pasta hot, sprinkled with grated Parmesan cheese and chopped parsley.
