Ingredients

500g canjiquinha (corn grits)

1kg pork ribs cut into pieces

1 large chopped onion

4 cloves of garlic, chopped

2 chopped tomatoes, skinless and seedless

1 chopped red pepper

1 chopped yellow pepper

1 tablespoon of tomato paste

1 bay leaf

1 teaspoon of paprika

1 liter of meat broth or water

Salt and black pepper to taste

Oil or lard for sautéing

Green chives (parsley and chives) to taste
Preparation mode
- Wash the hominy under running water and let it soak for about 30 minutes. Then drain and set aside.
- Season the ribs with salt and black pepper.
- In a large pan, heat a little oil or lard and brown the ribs well. Book.
- In the same pan, using the fat from the ribs, sauté the onion and garlic until golden.
- Add the peppers and sauté for a few more minutes.
- Add the tomatoes and tomato paste, mixing well.
- Add the drained hominy and mix well with the braised ingredients.
- Add the meat broth or water, bay leaves and paprika. Stir well.
- Return the ribs to the pan, mixing them with the hominy and the other ingredients.
- Let it cook over medium heat, stirring occasionally, until the hominy is well cooked and the broth thickens. This should take about 30 to 40 minutes. If necessary, add more water or broth during cooking.
- Adjust salt and pepper if necessary.
- Turn off the heat and add the chopped green chilli.
