Ingredients

2 medium apples (with or without peel, to taste)

1 cup of rolled oats

1 cup whole wheat flour (or regular wheat flour)

1/2 cup brown sugar (or regular sugar)

1/2 cup vegetable oil (or coconut oil)

3 eggs

1 tablespoon of cinnamon powder

1 tablespoon baking powder

1/2 cup milk (or plant-based milk)

1/2 cup raisins or chopped walnuts (optional)

A pinch of salt

Sugar and cinnamon for sprinkling (optional)
Preparation mode
- Wash and peel the apples, if preferred. Cut them into cubes and set aside. If desired, drizzle the apples with a little lemon juice to prevent them from browning.
- In a blender, beat the eggs, oil and milk until you obtain a homogeneous mixture.
- In a large bowl, mix the whole wheat flour, oats, brown sugar, ground cinnamon and pinch of salt.
- Pour the liquid mixture over the dry ingredients and stir well with a wooden spoon or spatula until everything is incorporated.
- Add the apple cubes to the dough and mix gently. If desired, also add raisins or chopped walnuts.
- Preheat the oven to 180°C.
- Grease and flour a cake pan (it can be round, square or with a hole in the middle).
- Pour the dough into the pan and level it with the spatula. If you want, sprinkle sugar and cinnamon on top to form a sweet crust.
- Bake in the preheated oven and bake for approximately 35 to 40 minutes, or until a toothpick inserted into the center of the cake comes out clean.
- Remove the cake from the oven and let it cool for a few minutes before unmolding.
- Serve the apple cake with oatmeal warm or at room temperature, accompanied by tea or coffee.
