This recipe can be adapted with different types of sausage and spices, and can be served with side dishes such as sauces or cheeses to make it even more irresistible.
Ingredients

4 French breads (or other type of bread of your choice)

500g of Tuscan or Calabresa sausage (fresh or smoked)

1 large onion cut into slices

2 chopped garlic cloves
-
1 red pepper cut into strips (optional)

2 tablespoons olive oil

Black pepper and salt to taste

Chopped parsley to decorate (optional)
Preparation mode
- Remove the sausage from the gut, if you prefer, and cut it into small pieces or slices, depending on the texture you want.
- In a large skillet, heat the olive oil and add the sausage. Fry over medium heat until golden brown and cook completely. Reserve.
- In the same skillet, add the onion and garlic, sautéing until they are soft and gold.
- If you use the peppers, add it and sauté for a few more minutes until it softens.
- Cut the breads in half and, if desired, warm them slightly on a plate or frying pan.
- Stuff the bread with fried sausage and braised vegetables.
- If you want, add cheese, mustard sauce or homemade mayonnaise to give a special touch.
- Finish with chopped parsley on top.
- Serve bread with still hot sausage, accompanied by a refreshing drink like a juice or soda, or, for those who prefer, a very cold beer!
