Here is a basic and easy recipe to prepare your vatapá:
Ingredients

500g dried shrimp (shell and head removed)

500ml coconut milk

200g roasted, skinless peanuts

2 medium onions chopped

2 cloves of garlic, chopped

2 ripe tomatoes, chopped

1 chopped green pepper

1 chopped red pepper

1 bunch of green chillies (parsley and coriander), chopped

100ml palm oil

100g crustless bread (or cassava flour)

2 tablespoons olive oil

Salt to taste

Black pepper to taste

Water (quantity required)
Preparation mode
- Start by washing the dried shrimp well under running water to remove excess salt. Then let them soak in water for about 1 hour.
- In a large pan, heat the olive oil and sauté the onion and garlic until golden.
- Add the previously hydrated and drained shrimp, sautéing them until cooked.
- Add the chopped tomatoes, peppers and chives, stirring well to incorporate the flavors.
- In a blender, place the coconut milk, roasted and skinless peanuts, and blend until you obtain a homogeneous mixture.
- Pour the blender mixture into the pan with the other ingredients, stirring constantly to prevent it from sticking to the bottom.
- Then add the palm oil, salt and black pepper to taste. Taste and adjust seasoning if necessary.
- Let it cook over low heat for about 15 to 20 minutes, stirring occasionally to prevent it from burning.
- If the vatapá is too liquid, add sliced ​​bread (or cassava flour) to thicken the consistency. Stir well until incorporated.
- Continue cooking for a few more minutes until you reach the desired texture, which should be creamy and consistent.
