Ingredients

  • 1 1/2 cups all-purpose flour

  • 100g cold butter, cut into cubes

  • 1 ovo

  • 1 tablespoon ice water (if necessary)

  • Salt to taste

  • 200g grated mozzarella cheese

  • 100g grated parmesan cheese

  • 200ml cream

  • 3 eggs

  • Salt and black pepper to taste

  • Nutmeg to taste (optional)

Preparation mode

  • In a bowl, mix the wheat flour with the salt. Add the butter and mix with your fingertips until you get a coarse crumb.
  • Add the egg and mix until a homogeneous dough forms. If necessary, add ice water little by little until the dough comes together.
  • Form the dough into a ball, wrap it in plastic wrap and refrigerate for at least 30 minutes.
  • After this time, roll out the dough with a rolling pin on a floured surface until you get a circle larger than the quiche shape.
  • Place the dough in a quiche pan with a removable bottom, pressing well on the sides and bottom. Poke holes in the dough with a fork to prevent it from puffing up.
  • In a bowl, beat the eggs with the cream. Add the grated cheeses and season with salt, pepper and nutmeg (if using).
  • Pour the filling over the dough in the pan, spreading it evenly.
  • Preheat the oven to 180°C. Bake the quiche and bake for about 30-40 minutes, or until the filling is set and the top is golden.
  • Remove from the oven and let it cool slightly before unmolding. Serve warm or at room temperature.
