Ingredients

  • 2 carrots

  • 1 zucchini

  • 1 eggplant

  • 1 red pepper

  • 1 yellow pepper

  • 1 red onion

  • 200g broccoli

  • 200g cauliflower

  • 3 cloves of garlic

  • Olive oil

  • Salt and pepper to taste

  • Fresh or dried herbs (rosemary, thyme, oregano, etc.)

Preparation mode

  • Heat the oven to 200°C.
  • Wash all vegetables well.
  • Cut the carrots into slices or strips.
  • Cut the zucchini and eggplant into cubes or slices.
  • Remove the seeds from the peppers and cut them into strips.
  • Cut the red onion into thick slices.
  • Separate the broccoli and cauliflower into florets.
  • Peel and lightly crush the garlic cloves.
  • Place all the cut vegetables in a large baking dish.
  • Drizzle generously with olive oil.
