1 kg of meat (can be breast, shoulder, chuck or other meat of your choice)

2 tablespoons of oil

2 cloves of garlic, chopped

1 medium onion chopped

2 chopped tomatoes without skin and seeds

1 bay leaf

1/2 cup tomato sauce

1 cup of water

Salt and pepper to taste

Chopped green chili to taste

- Season the meat with salt and pepper to taste.
- If you wish, you can make small cuts in the meat so that the seasonings penetrate better.
- Heat the oil in the pressure cooker.
- Add the meat and brown well on all sides. This process is important to seal the meat and maintain the juices.
- Remove the meat from the pan and set aside.
- In the same pan, add the garlic and onion and sauté until golden.
- Add the tomatoes and sauté until they start to break down.
- Place the meat back in the pan and add the bay leaf.
- Add the tomato sauce and water.
- Cover the pressure cooker and, after reaching pressure, cook for approximately 40 minutes over medium heat.

- Carefully open the pan, check the doneness of the meat (it should be tender) and adjust the salt, if necessary.
- If you want a thicker sauce, leave the pan uncovered over low heat to reduce the sauce.
- Sprinkle chopped green chillies over the meat before serving.
