  • 2 cloves of garlic, chopped

  • 1 medium onion chopped

  • 2 ripe tomatoes, chopped (or 1 can of peeled tomatoes)

  • 1/2 cup sliced ​​green or black olives

  • 1/4 cup olive oil

  • Salt and pepper to taste

  • 1 teaspoon of oregano

  • 1/4 cup chopped parsley

  • Grated parmesan cheese (optional)

Preparation mode

  • Cook the pasta in a large pot of salted water, following package instructions. Drain and reserve.
  • In a large skillet, heat the olive oil over medium heat.
  • Add the chopped onion and sauté until translucent.
  • Add the chopped garlic and sauté for another minute, being careful not to burn it.
  • Add the chopped tomatoes (or peeled tomatoes) to the pan and cook for about 5-7 minutes, until the tomatoes are very soft and form a sauce.
  • Add the shredded sardines to the pan and mix well.
  • Add the sliced ​​olives, oregano, salt and pepper to taste. Cook for a few more minutes so the flavors blend.
  • Add the cooked pasta to the skillet and mix well so that the sauce coats all the pasta.
  • If necessary, add a little of the pasta cooking water to make the sauce more fluid.
