500g fresh strawberries (washed and chopped)

1 cup of sugar

1/4 cup of water

2 tablespoons cornstarch

1 tablespoon lemon juice

1 teaspoon vanilla essence (optional)
Preparation mode
- Wash the strawberries well, remove the stems and chop them into small pieces.
- In a pan, add the chopped strawberries, sugar and lemon juice.
- Cook over medium heat, stirring occasionally, until the strawberries release their juice and begin to soften, about 5-7 minutes.
- In a small bowl, mix cornstarch with water until completely dissolved.
- Add the cornstarch mixture to the pan with the strawberries, stirring constantly.
- Continue cooking and stirring until the mixture thickens, about 2-3 minutes.
- Remove the pan from the heat and add the vanilla extract, if using.
- Let the filling cool completely before using it in the cake.
