Ingredients

Coconut milk:

  • 1 cup coconut milk
  • 1 tablespoon sugar (optional)
  • a pinch of salt

Preparation of black rice pudding:

  1. Soak the rice: Wash the black rice under cold water until the water runs clear. Then, soak the rice in water for at least 4 hours or overnight to soften it.
  2. Cook the rice: Drain the rice and place it in a saucepan with 4 cups of water. Bring to a boil over medium-high heat, then reduce heat to medium-low and simmer, covered, for about 30-40 minutes, or until the rice is tender and has absorbed most of the water.
  3. Add sugar and salt: Add the palm sugar and salt to the cooked rice, and stir well. Simmer for about 10 more minutes, until the sugar dissolves and the pudding has a thick, creamy consistency.

Coconut milk:

  1. Heat the coconut milk: In a small saucepan, heat the coconut milk over medium heat. If desired, add sugar and a pinch of salt to adjust the flavor. Heat until lukewarm, but do not let it boil.
