Ingredients

  • 1 cup of lentils

  • 1 bay leaf

  • 1 small onion chopped

  • 1 chopped red pepper

  • 1 small chopped cucumber

  • 1 large chopped tomato

  • 1 grated carrot

  • 2 tablespoons chopped parsley

  • 2 tablespoons chopped chives

  • 1 clove of minced garlic

  • Juice of 1 lemon

  • 3 tablespoons olive oil

  • Salt and pepper to taste

Preparation mode

  • Wash the lentils well under running water.
  • In a medium saucepan, add the lentils and cover with water.
  • Add the bay leaf and a pinch of salt.
  • Cook over medium heat for about 20-25 minutes, or until the lentils are tender but still firm. Don’t let them fall apart.
  • Drain and discard the bay leaf. Let it cool.
  • While the lentils cool, prepare the vegetables.
  • In a large bowl, combine the onion, pepper, cucumber, tomato, carrot, parsley, chives and garlic.
  • Add the cooked and cooled lentils to the bowl with the vegetables.
  • Drizzle with lemon juice and olive oil.
  • Season with salt and pepper to taste.
  • Mix all the ingredients well until they are well combined.
  • Refrigerate for at least 30 minutes to allow the flavors to blend.
  • Serve cold.
