Ingredients

2 large zucchini

2 tablespoons olive oil

2 cloves of minced garlic

1 can (400g) peeled tomatoes

1 teaspoon salt

1/2 teaspoon black pepper

1/2 teaspoon dried oregano

Fresh basil leaves to taste

Grated parmesan cheese to taste
Preparation mode
- Wash the zucchini well and, using a spiralizer or julienne grater, cut them into thin strips, similar to spaghetti. Set aside.
- In a medium saucepan, heat the olive oil over medium heat.
- Add the minced garlic and sauté until it begins to brown, about 1-2 minutes.
- Add the peeled tomatoes, crushing them with a wooden spoon to form a sauce.
- Season with salt, black pepper and oregano.
- Let it cook on low heat for about 15-20 minutes, stirring occasionally, until the sauce thickens.
- In a large skillet, heat some olive oil over medium heat.
- Add the spiralized zucchini and cook for 2-3 minutes, stirring frequently, just until the zucchini softens slightly. Be careful not to overcook it, or it will become too mushy.
- Add the tomato sauce over the cooked zucchini and mix well.
- Turn off the heat and add fresh basil leaves.
- Serve immediately with grated Parmesan cheese on top, if desired.
