1 cup (225g) unsalted butter, at room temperature

1 teaspoon vanilla extract

Royal icing or sugar icing for decorating

Preparation mode
- In a medium bowl, sift together the flour, baking powder, and salt. Set aside.
- In the bowl of a stand mixer, beat the butter and sugar until light and fluffy.
- Add the egg, vanilla extract, and almond extract (if using). Beat until well combined.
- Gradually add the flour mixture to the wet ingredients, beating on low speed until a smooth dough forms.
- Divide the dough in half, form two disks, wrap them in plastic wrap and refrigerate for at least 1 hour.
- Preheat oven to 180°C (350°F).
- Line two large baking sheets with parchment paper.
- On a lightly floured surface, roll out the chilled dough to about 1/4 inch thick.
- Use Christmas-themed cookie cutters (trees, stars, snowmen, etc.) to cut out the dough.
- Transfer the cookies to the prepared baking sheets, leaving space between them.
- Bake for 8-10 minutes, or until the edges begin to brown slightly.
- Let cool on baking sheets for 5 minutes before transferring to a wire rack to cool completely.
- Prepare royal icing or sugar icing according to package directions or recipe.
- Divide frosting into small bowls and add food coloring as desired.
- Decorate the cold cookies with icing and various sprinkles.
- Allow the frosting to dry completely before storing the cookies in an airtight container.
