Ingredients

  • 4 loaves of stale French bread (or about 200g of bread)

  • 1 liter of milk

  • 1 cup of sugar

  • 3 eggs

  • 1 teaspoon vanilla essence

  • 1/2 cup raisins (optional)

  • 1 cup sugar (for the caramel)

Preparation mode

  • Place 1 cup of sugar in a saucepan and heat over low heat.
  • Stir until the sugar melts and turns golden brown.
  • Pour the caramel into a pudding mold, spreading it evenly over the bottom and sides. Set aside.
  • Tear the bread into small pieces and place them in a large bowl.
  • Heat the milk and pour over the bread, leaving it to soak for about 15 minutes to soften.
  • In a blender, beat the eggs, 1 cup of sugar and the vanilla essence.
  • Add the bread and milk mixture to the blender and blend until smooth.
  • If desired, add raisins to the mixture and stir with a spoon.
  • Pour the mixture into the caramelized pan.
  • Preheat the oven to 180°C.
  • Bake the pudding in a bain-marie (place the pudding mold inside a larger baking tray with hot water).
  • Bake for about 1 hour or until a toothpick inserted into the center comes out clean.
  • Remove from the oven and let cool completely before unmolding.
  • To unmold, run a knife around the edges of the pan and turn the pudding out onto a plate.
