The ingredients used for this delicious and healthy air fryer rice cake recipe are:

Ingredients

  • 300g of cleaned shrimp

  • 2 cups of rice

  • 4 cups of water

  • 1 chopped onion

  • 2 cloves of minced garlic

  • 1 chopped bell pepper (optional)

  • 2 chopped tomatoes

  • 1/2 cup tomato sauce

  • Salt to taste

  • Black pepper to taste

  • Olive oil

  • Chopped parsley for garnish

Preparation mode

  • In a pan, sauté the onion and garlic in olive oil until golden.
  • Add the shrimp and cook for a few minutes until they turn pink. Season with salt and pepper to taste.
  • Remove the shrimp from the pan and set aside.
  • In the same pan, add a little more olive oil, if necessary, and sauté the peppers and tomatoes until soft.
  • Add the rice and stir well, letting it fry for a few minutes.
  • Add the tomato sauce and mix well.
  • Pour water into the pan, season with salt to taste and bring to a boil.
  • Once the water boils, reduce the heat, cover the pan and let it cook for about 15-20 minutes, or until the rice is cooked and the water has been absorbed.
  • When the rice is ready, add the reserved shrimp on top of the rice in the pan.
  • Cover the pan again and let it rest for a few minutes.
  • Serve the rice with shrimp sprinkled with chopped parsley on top.
