This pumpkin broth is perfect using the ingredients below and following the preparation instructions.
Ingredients
-
1 medium pumpkin (approximately 1.5 kg), peeled and cut into cubes
-
1 medium onion, chopped
-
2 cloves garlic, minced
-
4 cups vegetable broth or water
-
1/2 teaspoon ground ginger (optional)
-
1/4 teaspoon nutmeg (optional)
-
Salt and pepper to taste
-
2 tablespoons olive oil
-
Heavy cream or coconut milk for serving (optional)
-
Roasted pumpkin seeds for garnish (optional)
Preparation mode
- In a large saucepan, heat the olive oil over medium heat. Add the chopped onion and sauté until soft and translucent, about 5 minutes. Add the minced garlic and sauté for 1 more minute.
- Add the pumpkin cubes to the pan and season with salt, pepper, ground ginger, and nutmeg (if using). Sauté for a few minutes, stirring occasionally.
- Pour the vegetable broth or water over the squash in the pot. Bring to a boil, then reduce the heat to medium-low and simmer for about 20-25 minutes, or until the squash is tender.
- Remove the pot from the heat and use a hand blender or a conventional blender to puree the soup until smooth. If using a conventional blender, work in batches to avoid overflowing.
- After pureeing the soup, return it to the pot over low heat to warm through. Check the seasoning and adjust as needed.
- Serve the pumpkin soup hot, with a dollop of heavy cream or coconut milk on top, if desired. You can also garnish with toasted pumpkin seeds for an extra touch of flavor and texture.
- Enjoy your delicious pumpkin broth!
