- Start by washing the sago in cold water to remove any dirt. Let it soak in water for about 30 minutes to 1 hour.
- After soaking, drain the water and place the sago in a large pot. Add the 3 cups of water and bring to a boil over medium heat. Bring to a boil, stirring occasionally to prevent it from sticking to the bottom of the pot. The sago is ready when the balls become transparent, this usually takes 20 to 30 minutes.
- While the sago is cooking, in another pan, pour the red wine and sugar. Stir well to dissolve the sugar.
- When the sago is cooked, drain off any excess water and transfer it to the pan with the sweetened wine. Cook over low heat for another 5 to 10 minutes, stirring frequently to ensure the sago absorbs the flavor of the wine.
- After the additional cooking time, turn off the heat and let the sago cool slightly before serving. You can serve the wine sago hot or cold, as you prefer. If you like, you can also add some fresh fruit to garnish or accompany, such as strawberries, raspberries or blueberries.
- Serve the wine sago as a dessert or as a side dish for other dishes. If you prefer a sweeter version, you can adjust the amount of sugar according to your personal taste. Enjoy!
