Carrot cake with chocolate

Ingredients

3 medium carrots

1 cup vegetable oil

2 cups of sugar

2 cups of wheat flour

Preparation mode
- Preheat the oven to 180°C. Grease and flour a medium cake pan.
- Peel and cut the carrots into small pieces. Then, blend the carrots, eggs and oil in a blender until you obtain a homogeneous mixture.
- In a large bowl, mix the sugar and wheat flour. Pour the blender mixture into the bowl and mix well until all the ingredients are incorporated.
- Add the baking powder to the dough and mix gently until uniform.
- Pour the batter into the prepared pan and bake in the preheated oven for approximately 40 minutes, or until a toothpick inserted into the center of the cake comes out clean.
- While the cake is baking, prepare the icing: in a pan, mix the chocolate powder, sugar, butter and milk. Cook over low heat, stirring constantly, until all the ingredients are well incorporated and the topping is smooth and shiny.
- Once the cake is baked, remove it from the oven and wait for it to cool slightly before unmolding it. Spread the chocolate frosting over the still warm cake.
- Let the cake cool completely before cutting and serving. Enjoy!
